Burdock (arctium lappa.) is considered one of the most valuable herbs in herbal medicine.

Burdock has been used for centuries, in Chinese medicine and traditional herbal medicine, and was recognised by Hildegard of Bingen in the 12th century for it's valuable healing abilities.

Most of Burdock's parts can be used, from its leaves, shoots, flowers, and roots, although the commonly eaten part of burdock is the root, which is traditionally peeled, sliced thin and added to stir-fries, and it's also pickled like daikon.
The roots were also used as a potato substitute in Russia.
Use the young leaves like you would spinach.
Young flower stalks can also be harvested before flowers appear, tasting similar to globe artichoke.

Burdock Root contains antioxidants, such as quercetin, inulin, phenolic acids, and luteolin, which can help reduce inflammation throughout the body.  Burdock Root also contains mucilage which acts as a protection for the mucous membrane layer of the stomach, helping it to heal.

But mostly, Burdock is used in herbal medicine, as one of the most powerful blood purifiers in the herbal kingdom!
